A September Recipe or Two For Your Household

I wanted to give you a few new recipe ideas of things you might feed your family or if you are entertaining, you can quickly make for guests.

Recipe #1: Tuna Melts with Olives and Lemon

  • Makes 4 serving, serving size is 2 toasts, makes 8 toasts, total prep time is 25 minutes

8 3/4-inch thick slices artisanal Italian bread (about 1 pound)

3 5 ounce cans albacore tuna packed in olive oil (undrained)

1/4 cup chopped pitted green olives

1/4 cup chopped cornichons

1 large lemon (2 tsp. zest, 1 Tbsp. juice)

2 teaspoons Dijon-style mustard

1/4 teaspoon black pepper

4 ounces thinly sliced cheese, such as Havarti, comte, or mild Swiss

Watercress (optional)

Directions

  • Preheat broiler.* Arrange bread slices on a baking sheet. Broil 4 inches from heat 2 minutes or until lightly toasted, turning once. In a medium bowl combine undrained tuna, olives, cornichons, lemon zest and juice, mustard, and black pepper. Stir to combine and break up tuna.
  • Divide tuna mixture among bread slices; top with cheese. Broil 11/2 to 2 minutes or until cheese melts. If desired, top with watercress.

Toast 10 minutes, turning once. Top with tuna mixture and cheese; toast 5 minutes more.

 

Recipe #2: Kale, Halloumi, and Peach Salad

  • Makes 8 services, serving size 1 cup, makes 8 cups, total prep time 40 minutes

3 ounces very thinly sliced prosciutto (about 8 slices) or bacon

cup olive oil, plus 1 Tbsp.

lemon (2 tsp. zest, 1 Tbsp. juice)

tablespoon lime juice

tablespoon orange juice

tablespoon balsamic vinegar

small shallot, finely chopped ( 1 1/2 Tbsp.)

tablespoon honey

teaspoon Dijon-style mustard

teaspoon ground black pepper

clove garlic, minced

cups stemmed and coarsely chopped fresh Tuscan (lacinato) or curly kale

peaches, pitted, and sliced

1/2
cup crumbled Halloumi cheese or feta cheese

1/4
cup toasted pecans, coarsely chopped

Salt to taste

Directions

  • Preheat oven to 350 degrees F. Place prosciutto slices on a nonstick baking sheet without overlapping. Bake 15 minutes or until crisp; let cool. Break into pieces.
  • For citrus vinaigrette: In a screw-top jar combine the 1/2 cup olive oil, the lemon zest, citrus juices, vinegar, shallot, honey, mustard, garlic, and 1/2 tsp. black pepper. Cover; shake.
  • Place kale and remaining 1 Tbsp. olive oil in a large serving bowl. Using your hands, massage kale until softened. Top with half the peaches, cheese, and pecans. Toss with vinaigrette. Season with salt. Top with remaining peaches, cheese, and pecans, and the prosciutto.
