I wanted to give you a few new recipe ideas of things you might feed your family or if you are entertaining, you can quickly make for guests.
Recipe #1: Tuna Melts with Olives and Lemon
- Makes 4 serving, serving size is 2 toasts, makes 8 toasts, total prep time is 25 minutes
8 3/4-inch thick slices artisanal Italian bread (about 1 pound)
3 5 ounce cans albacore tuna packed in olive oil (undrained)
1/4 cup chopped pitted green olives
1/4 cup chopped cornichons
1 large lemon (2 tsp. zest, 1 Tbsp. juice)
2 teaspoons Dijon-style mustard
1/4 teaspoon black pepper
4 ounces thinly sliced cheese, such as Havarti, comte, or mild Swiss
- Preheat broiler.* Arrange bread slices on a baking sheet. Broil 4 inches from heat 2 minutes or until lightly toasted, turning once. In a medium bowl combine undrained tuna, olives, cornichons, lemon zest and juice, mustard, and black pepper. Stir to combine and break up tuna.
- Divide tuna mixture among bread slices; top with cheese. Broil 11/2 to 2 minutes or until cheese melts. If desired, top with watercress.
Toast 10 minutes, turning once. Top with tuna mixture and cheese; toast 5 minutes more.
